Cruise lines vary when it comes to dinner times. some have set times (early or late). Early dining is usually around 6:00pm and late dining is around 8:00pm. Other cruise lines offer "freestyle" dining, which means you have more flexibility for dinner. When you book a cruise you specify your preference for dining times. Ships usually have a general dining area that consists of a buffet. This is used for breakfast and lunch.

The buffet usually opens around 6:00am and stays open all day. The buffets are usually open for the dinner hour as well. Most cruise ships also have a 24 dining option at a restaurant. They also offer 24 hour room service. Needless to say, dining is one of the special features on a cruise.
Attire
What to wear? Most of your vacation will be casual. If you are cruising to a warm area, it is a good idea to check the weather reports. It is a good idea to bring a light jacket, sweater or sweatshirt, given that the evening winds may increase at night. Bring a bathing suit for the on-board swimming pools and Jacuzzi. Pack light. Most people tend to over-pack. Some ships have a "dress-up" night for dinner, which is optional. Check with your cruise line or host.
Excursions
At each port of call (destination) there are opportunities for various experiences. These are referred to as "excursions." These will depend on the location. You can take tours, go biking, snorkeling, para-sailing, horseback riding, take a cooking class. There are any number of options that are available.
Tips
Your stateroom (cabin) will be assigned a steward, who will provide your daily housekeeping. It is customary to reward the steward with a tip. Suggested tipping rates typically run $10 per day per person. However, this is totally flexible and you can tip at whatever amount you choose. As an option, the tips can be paid ahead of time, prior to the cruise.
